The sweetness of fresh, local strawberries adds an unusual twist to this Mediterranean style salad. Sure to be a crowd pleaser for any potluck or BBQ gathering!

INGREDIENTS (6 servings)

  1/2 cup (125 ml) olive oil

  1/4 cup (63 ml) balsamic vinegar 

  1 teaspoon (5 ml) Dijon mustard

  1/2 teaspoon (2.5 ml) garlic powder or 1 large garlic clove, crushed

  1/4 teaspoon (1.25 ml) salt

  1/4 teaspoon (1.25 ml) ground pepper

  1 pint (2 cups), (500 ml) fresh strawberries, hulled and sliced

  5 cups (1,250 ml) baby spinach, arugula or chopped romaine lettuce

☐ 1/2 cup (125 ml) fresh basil, torn into smaller pieces

☐ 6 ounces (170 grams) diced feta, mozzarella or vegan cheese

☐ 1 cup (250 ml) slivered almonds, lightly toasted


1. To make the dressing, combine the oil, vinegar, mustard, garlic, salt, ground pepper in a bowl or mason jar.

2. Place the baby spinach, arugula or chopped romaine lettuce in a large bowl and toss with 1/3 to 1/2 of the salad dressing. Place on 6 salad plates.

3. Mix the sliced strawberries with 1/3 to 1/2 of the remaining salad dressing and divide the strawberries evenly on top of the greens on the 6 salad plates.

4. Top each salad mound with some of the cheese or cheese alternative, torn basil leaves and slivered almonds. Serve immediately.
